Strawberry Cake recipe (Martha Stewart) *My thoughts*
I wanted to act all fancy and stuff yesterday so I decided to try this strawberry cake recipe from Martha Stewart.
Afterall, I did drool all over myself when I saw the same cake over at Two Peas and Their Pod.
*I actually followed their adapted version over Martha's...Only a couple of changes made
Here's what ya need:
6 tablespoons unsalted butter, at room temperature
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
1 large egg
1/2 cup buttermilk
1 teaspoon pure vanilla extract
1 pound strawberries, hulled and sliced
2 tablespoons turbinado sugar, for sprinkling on top of cake
Note: I have no clue what turbinado sugar is so I used regular sugar on top. Remember, I said I was "TRYING" to be fancy. I never claimed to actually be....ya know....Fancy.
1.) Preheat the oven to 350 degrees and butter a 10 inch springform pan or pie plate.
2.) Sift your flour, baking powder and salt together in a bowl....set aside.
3.) Add butter and sugar into your mixer (mix until fluffy) then slowly add your egg, milk and vanilla.
Mix until all is combined.
4.) Gradually mix in your flour mixture.
Try to keep the littles away....(It's impossible)
5.) Transfer the mixture to your pie dish. Add your sliced berries on top.
6.) Now sprinkle sugar on top of the berries and bake for 10 minutes. Reduce temp to 325 and bake for an additional 50 minutes.
When the cake is done, allow to cool.

My thoughts? Eh...It was good but I wouldn't say it's GREAT. I was expecting something different, I guess??!!

The kids loved it though. Of course, they like anything with SUGAR.

Awesome mixer, BTW. I love the color! I just recently purchased a KitchenAid mixer myself and absolutely love it!

Turbinado sugar is just unbleached, raw sugar. It would have made the cake less spongy because the granules are a little bigger than regular white sugar. You should be able to get it in the baking section, between the white sugar and brown sugar. (It's actually brown)
This cake certainly looks gorgeous!
